Grinchmas Peppermint Truffles

Sharing is caring!

The other night as we unpacked our boxes to slowly make this house a home, my kids stumbled across a box filled with books from my childhood. Books such as “The Littlest Angel”, “The Christmas Cat”, and of course “The Grinch”. Even though these books were well battered and their bindings we literally crumbling, we all curled up into piles of blankets to explore the tales they had to tell. And, just like that my kids discovered the fascination of “The Grinch”.

As we got to the last page we read the words that right now at this moment I needed to hear…

Christmas Day will always be
Just as long as we have we.

Welcome Christmas while we stand
Heart to heart and hand to hand. –The Grinch

I need to hang that somewhere to remind me, for now the blog will do.

The next day as we made our Christmas cookies for Santa the kids decided that they also needed to make a treat for The Grinch should he decided to show up. A treat that would warm his heart, and potentially cure his bad breath. And so these Grinchmas Peppermint Truffles came to be…many messes later.

With that said, if you plan on making these Christmas truffles and you have never made truffles before (like me) be forewarned that at one point of attempting to make these I may or may not have been contemplating adding alcohol to my chocolate goo and forgoing truffles all together…

Directions

For this recipe you will use a ratio of 3:1 – 3 cups of chocolate per 1 cup of heavy whipping cream. If you need a thinner chocolate add more heavy whipping cream, if you need a thicker one add more candy wafers.

  1. In a microwave bowl bring your heavy whipping cream to a boil. Once boiling add in your candy chips and stir until chocolates are fully melted. Ideally you should have a heavy sauce at this point such as a dip, firm enough to scoop but not firm enough to hold a shape.I cannot wait to try these Grinchmas Peppermint Truffles!
  2. Place in a refrigerator until completely firm. This took me about an hour and a half.
  3. Once fully firmed scoop out balls, shape, and place them on a piece of wax paper. I scooped with a melon baller but did end up using my hands to roll balls out as it was quicker and they looked a lot better. Poke a lollipop stick or paper straw into every truffle. Return to refrigerator for up to 30 minutes.I cannot wait to try these Grinchmas Peppermint Truffles!
  4. After the Grinchmas truffles have been given a chance to set it is time to add the decorations! To do this microwave a bowl of water for 2 minutes. Fill a ziplock bag with your dark green candy melts. Remove the water from the microwave and submerge the bag of chocolates. Remove every so often to knead the chocolates until they are melted.I cannot wait to try these Grinchmas Peppermint Truffles!
  5. Once fully melted snip a corner off of the bag and squeeze out the melted chocolates on to your truffles. Cover liberally.
  6. Then quickly before the melted chocolates harden pour on your peppermint sprinkles. My kids may have had a little too much fun with this step.I cannot wait to try these Grinchmas Peppermint Truffles!
  7. Place them in the refrigerator again for 10-15 minutes and then serve and enjoy!

After taking the first bite Livia exclaimed, “These taste just like the mints they give you after dinner at that fancy pants place”, and indeed they did.
