Grinchmas Peppermint Truffles

Ingredients

  • Light Green Candy Melts
  • Dark Green Candy Melts
  • Peppermint Sprinkles
  • Heavy Whipping Cream
  • Cake Pop Sticks or Paper Straws

Instructions

  1. In a microwave bowl bring your heavy whipping cream to a boil. Once boiling add in your candy chips and stir until chocolates are fully melted. Ideally you should have a heavy sauce at this point such as a dip, firm enough to scoop but not firm enough to hold a shape.
  2. Place in a refrigerator until completely firm. This took me about an hour and a half.
  3. Once fully firmed scoop out balls, shape, and place them on a piece of wax paper. I scooped with a melon baller but did end up using my hands to roll balls out as it was quicker and they looked a lot better. Poke a lollipop stick or paper straw into every truffle. Return to refrigerator for up to 30 minutes.
  4. After the Grinchmas truffles have been given a chance to set it is time to add the decorations! To do this microwave a bowl of water for 2 minutes. Fill a ziplock bag with your dark green candy melts. Remove the water from the microwave and submerge the bag of chocolates. Remove every so often to knead the chocolates until they are melted.
  5. Once fully melted snip a corner off of the bag and squeeze out the melted chocolates on to your truffles. Cover liberally.
  6. Then quickly before the melted chocolates harden pour on your peppermint sprinkles.
  7. Place them in the refrigerator again for 10-15 minutes.
  8. Serve and enjoy!

Recipe Notes

For this recipe you will use a ratio of 3:1 – 3 cups of chocolate per 1 cup of heavy whipping cream. If you need a thinner chocolate add more heavy whipping cream, if you need a thicker one add more candy wafers.
