Easy Pancake Muffins Recipe - The ultimate grab & go breakfast!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter melted
  • Fruit frozen or fresh, Nuts, Mini Chocolate Chips, or Whatever You Desire (optional)
  • Warm Syrup for serving

Instructions

  1. Preheat oven to 425 degrees.
  2. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  3. Spray a muffin pan generously with baking spray. Fill cups 2/3 full. If using fruit, drop 2 to 3 into each cup.
  4. Bake for 8 to 9 minutes, or until golden brown on top. Let sit in the pan for 1 to 2 minutes, then turn them out of the pan. (Use a small knife if any are stubborn.)
  5. Serve warm with warm syrup!
