Banana Peanut Butter Muffins

A real kid pleaser and a healthy snack, this moist muffin is a perfect way to put together two classically favorite flavors in one muffin! Your family will be happy to find them in your bread basket!

Ingredients

  • 1 c. self-rising flour
  • 1 c. quick oats
  • ¾ c. brown sugar
  • ¾ c. peanut butter
  • 2 tbsp. vegetable oil
  • ¾ c. milk
  • 2 large eggs
  • 2 overripe bananas mashed
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine the flour, quick oats, brown sugar, and cinnamon.
  3. In a separate bowl, mash the bananas, and then mix in the peanut butter, oil, eggs, milk, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until moistened. Do not overmix.
  5. Spoon the batter (it will be thick) into greased muffin tins.
  6. Bake 20-25 minutes at 375 degrees or until a toothpick inserted into the center of the center muffins comes out clean.
