Creole Red Beans and Rice: Tender red kidney beans simmered slowly with Creole seasonings and smoked Andouille sausage, served over hot cooked rice for a traditional and warming meal.
The past couple of days it has been chilly here. That type of weather that demands a meal that will warm the soul. This simple red beans and rice recipe is one of our favorite go to’s for when the weather just needs some brightening!
This is also a fabulous recipe for Mardi Gras!
Ingredients Needed for Creole Red Beans and Rice:

- 1 pound dried red beans
- 7 cups water
- 2 green bell pepper, chopped
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, chopped
- 1 pound Andouille Sausage smoked
- 4 tablespoons Creole seasoning
- 3 bay leaves
- 1 teaspoon of Chili Powder
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 4 cups cooked Brown rice
Preparation:
One of the things that I absolutely adore about this recipe is that it is all cooked in the crock pot! Talk about easy!!!
Steps:
- Check red beans for any small pebbles then rinse thoroughly.
- Add beans, water, and chicken broth to the crock pot.
- Chop all the veggies and add to the crock pot.
- Next, chop the sausage.
- Complete it with creole seasoning (I used Tony’s).
- Turn the crock pot on high for 7 hours. When ready to eat, prepare your rice.
- Pour red beans over rice and serve.
