If there is one thing I never have trouble getting my kids to eat it is carbs. So for my kids, things like potato chips are a real treat. The problem that we often run into is that we never finish an entire bag before the chips start to go stale. This is not for lack of desire, but because potato chips are a controlled substance in my house 😉
Items Needed for Potato Chip Chicken Strips:
- A snack size bag of potato chips
- Bread Crumbs
- Ranch Dressing
- Chicken
One of the things that I love about this recipe is that it is quick, easy, and doesn’t require a lot of dishes! Everything you mix for this recipe will be done in a sandwich baggie.
To start pour in the potato chips that you plan on using. There is no wrong amount, I typically use about one snack bag. You can also use Ritz crackers which turns out just as delicious! Taking a rolling pin smash up the chips inside a sealed bag until they are at a small enough size to make you happy. Then slice up the thawed chicken, add it to the bag, and squirt in some ranch.
Shake it up real good and then pour everything out on to a pan. You want your chicken to be nice and coated, but it doesn’t have to be perfect.
As you can see the chips are sticking to the chicken, but not covering it all. Take your bread crumbs and sprinkle them over any uncovered areas.
Bake at 350 degrees for about 15-30 minutes depending on the thickness of your chicken and then serve!
