Watermelon Lime Popsicles

One of my all time favorite summer drinks is a good watermelon limeade. You know the type that is filled to the rim with crushed ice and is sweet yet sour in every sip. Kinda sounds like a margarita doesn’t it? Well, I like those too, but I promise you that isn’t what I am talking about. These Watermelon Lime Popsicles are just like that; refreshingly cold with a pucker you up sweetness.

In high school, we had this little sub shop right across the street from the school that served amazing sandwiches and limeades. Getting a cherry or watermelon limeade for lunch was seriously the highlight of my day.

Last summer we had a little gas station near the house that had them and I passed the love on to my kids.

This year though? I have had no such luck in finding our new spot for watermelon limeades – so when my kids asked for one the first day the weather went over 50 degrees, I had to get creative.

These Watermelon Lime Popsicles are refreshingly cold with the perfect blend of sweet watermelon and sour lime.

These watermelon lime ice pops were my best solution for enjoying all the sweet and sour goodness that is in a limeade without having to make an extra trip to the store for a club soda. You can also easily turn this into an adult only treat by replacing the water with tequila and triple sec.

I used half of a small watermelon cut up in chunks, which gave me almost 4 cups of watermelon. I then blended the watermelon chunks in the food processor, added in some mint and lime juice. Once smooth I poured the mixture into popsicle molds like these, added in popsicle sticks, and let them sit in the freezer until frozen. So simple. The hardest part is waiting for them to freeze!

Ingredients

  • 4-5 C. diced watermelon, seedless (about ½ small watermelon)
  • Mint, as desired (you can also use Mint Simple Syrup)
  • 1 Tbls. lime juice

Instructions

  1. Puree watermelon and mint in food processor or blender. Add lime juice. Taste and add more lime if needed.
  2. Pour into popsicle mold, insert sticks and freeze until frozen.

Notes

To make this into a Watermelon Margarita Popsicle add in 1/4 cup of tequila and 2 tbsp. of triple sec.
