Banana Peanut Butter Muffins

When we shop, we often buy way more bananas than we can possibly consume in a week. One week, the kid loves bananas, and the next, he doesn’t want to touch them. But we don’t throw them out when they turn brown. That’s when they’re in their prime for baking, and these banana peanut butter muffins are a great way to use up overripe bananas.

Perfect for a quick snack after school or breakfast on the run these banana peanut butter muffins are sure to become a family favorite!

Side note: I wish I could show you a pretty basket filled with muffins. That was my plan, but my husband came home hungry after a 12-hour night shift and devoured them. Oops!

Ingredients Needed for Banana Peanut Butter Muffins:

  • 1 c. self-rising flour
  • 1 c. quick oats
  • ¾ c. brown sugar
  • ¾ c. peanut butter
  • 2 tbsp. vegetable oil
  • ¾ c. milk
  • 2 large eggs
  • 2 overripe bananas, mashed
  • 1 tsp. vanilla extract (Nielsen-Massey vanilla is our absolute favorite to use in baking)
  • 1 tsp. cinnamon

Directions for Banana Peanut Butter Muffins:

  1. Preheat oven to 375 degrees.
  2. In a large bowl, combine the flour, quick oats, brown sugar, and cinnamon.
  3. In a separate bowl, mash the bananas, and then mix in the peanut butter, oil, eggs, milk, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until moistened. Do not overmix.
  5. Spoon the batter (it will be thick) into greased muffin tins.
  6. Bake 20-25 minutes at 375 degrees or until a toothpick inserted into the center of the center muffins comes out clean.

Serve warm with honey and butter. Yum!
