Goetze’s Chocolate Caramel Rice Krispie Treats: Layers of chocolate and gooey caramel on top of marshmallowey rice krispie goodness. A fantastic way to spice up a classical family favorite!

Rice Krispie Treats

Over spring break USA Love List sent us a fantastic box filled with Easter goodness from Goetze’s Candy. If only you could have seen the kids reactions when they ripped into the box only to find it filled with candy! Every kiddos dream right?

Sugar rush to the max — but, that’s ok because I have a particular soft spot for Geotze’s Caramels and Cow Tails…seriously one of my favorite candies that reminds me of my childhood! We have been having an absolute blast this week working our way through a list of caramel recipes to enjoy at home and share with family and friends. This particular batch of rice krispie treats found it’s way over to Grandma and Grandad’s house and was devoured by all before dinner hit the table — I would venture to say they enjoyed it 😉

Ingredients Needed for Chocolate Caramel Rice Kripie Treats:

  • Goetze’s Caramels
  • 10 oz. can of condensed milk
  • 6 oz. semisweet chocolate chips
  • 2 tablespoons corn syrup
  • 6 tablespoons butter
  • 4 cups marshmallows
  • 6 cups rice krispie cereal
  • Vanilla to taste
  • Sprinkles as desired

How to Make Chocolate Caramel Rice Krispie Treats:

Making these rice krispie bars is extremely simple. Make your rice krispie bars following a classical recipe of melting your butter (4 tbsp) and marshmallows together over low heat, then once melted pour and stir into your rice krispie cereal and allow to cool down.

What makes these bars special is the layer of chocolate and caramel that cover them in gooey goodness. To make your topping you will start by melting 24 pieces of Goetze’s Caramels.

Geotze's Caramels

Cook them over low heat with your condensed milk. You are going to want to stir constantly so that your caramels do not burn or boil.

Caramel and condensed milk

As your caramels melt they will clump. You want your syrup to remain as smooth as possible to prevent burning. As it starts to get clumpy and sticky add in one tablespoon at a time of butter. I typically use 2-3 tablespoons of butter throughout this entire process.

Add in butter

It does require your constant attention, but this goes fairly quickly and is for the most part simple. Once all of your caramels are melted your syrup will look fairly smooth. Add in your semisweet chocolates, vanilla, and corn syrup.

And stir until completely melted and smooth. Remove from heat and pour evenly over your rice krispie treats.

At this point your rice krispie bars are going to be extremely sticky. You can set aside to let them cool, OR you can do what we do (because we lack the patience) and throw them into the freezer for about 15 minutes until everything firms up.

Allow rice krispie treats to firm up

Then top with sprinkles, serve, and enjoy!
